the VERY GOOD OMELETTE

about 2 eggs per person
tomatoes
feta cheese
fresh spinach
paprika
some herbs..
milk
a small onion

beat the eggs with the milk
add salt and pepper.
heat the pan, add a little oil. let it heat again.
fry the chopped onion for a couple of minutes, then take out of the pan.
the flame should be relatively high.
throw in the mix. don't touch it.
after a minute or so, add the sliced up tomatoes, the fried onions, the cheese and finally the spinach.
then the paprika and the herbs.
let it cook rather high. eventually cover the pan a little.
when it's cooked but still a little juicy, take off the flame. let it cool down a little. only then with a wide wooden spatula, cover one half of the omelette with the other. cut up in slices.
