Cut them up very finely and place them in your large saucepan. If there's pips keep them in a little muslin bag and add in the saucepan to be removed at the end
Throw in 8 to 10 baies de genièvre, juniper berries..
Add 3 cups or 750ml of water.
Bring to boil and simmer for 15mn
Let rest for two hours.
Then add 2kg of sugar (so one third less than the fruit weight) bring to boil and simmer for as long as needed while testing repeatedly with a small amount that you'll put in the freezer for a couple minutes.
